What’s your go-to drunk food? You know what I’m talking about…that food that you always crave after a night out with friends when you’ve had a few beers. For me, it’s always carbs + cheese. Pretty basic, yep, but a hot slice of cheese pizza or a big greasy cheeseburger or a melty grilled cheese sandwich will always hit the spot when I’m buzzed.
Now, I was obviously not buzzed when went out to check out this new food truck yesterday (it was 11 am when I stopped by…) but I couldn’t help but thinking how these grilled cheese sandwiches are the ultimate indulgent comfort food. These, my friend, are the reason why I no longer do hard-and-fast New Years resolutions related to food. Life’s too short to give up cheese.

The Happy Grilled Cheese is the newest food truck to open up in Austin! I stopped by to meet the owners and taste a few menu items. Here’s what to you need know about The Happy Grilled Cheese:
- It’s a restaurant based in Jacksonville, Florida and this food truck is the first Austin location. The owner has roots in Austin!
- They’re parked in the 5000 Burnet food truck park right next to JewBoy Burgers, those tasty burgers I keep talking about. Stop by with a friend and try both trucks during one visit!
- Grilled cheese, tomato soup, and sides galore for all of your cheesy cravings. Gosh this stuff is good!
- They make their own kettle chips. Puhlease get an order of them, loaded with queso, chorizo, pico and bacon. You’ll thank me.
^ Loaded Kettle Chips with queso, bacon, pulled pork, and jalapeños. I really need this to be one of the food options at ACL Fest next year. It would be so good at a music festival, right?!
^ Papi Cheese-o: 3 cheeses, chorizo, mac & cheese, pico, jalapeños, and avocado. This is the sandwich on the menu that was made specifically for the Austin food scene! Everything else came from the original restaurant menu.
^ OMG Melt: 3 cheeses, mozzarella sticks, mac & cheese, bacon, tomato soup drizzle. Did I just find a sandwich that has mozzarella sticks and mac & cheese on it?!?! Yes. Yes I did, and it’s freaking fantastic.
