Super-Charge Me Cookies
Now that I’m on day 19 of this 21 day adventure cleanse of swearing off all animal products, gluten, and sugar, I’m starting to think about my transition back into “real” life. I obviously don’t want to undo all the hard work I did! But I don’t think I can stay this hard-core for the rest of my life, especially when vacation is over and I have more rushed mornings and late nights with friends.
So I’ve been experimenting with different recipes to satisfy my sugar cravings and add a little nutrition in the mix, too. There have been some kind of nasty ones (banana cinnamon brownies tasted like soggy paper) and some really great ones, like Super Charge Me Cookies from Dreena Burton’s Eat, Drink, and Be Vegan.
These cookies are amazing! They’re heavy and filling and packed with great things like flax seed, oats, and peanut butter. Oh, and the cookie dough tastes even better than the baked cookies:) I changed a few things from her recipe, like using gluten free ingredients, adding extra coconut flakes, and using flax seeds instead of flax meal.
Super Charge Me Cookies
adapted from Drenna Burton’s Eat, Drink, and Be Vegan
1 cup gluten-free oats
2/3 cup gluten free flour
1/4 tsp sea salt
1 tsp cinnamon
1/4 cup shredded coconut
1/2 cup mix-ins (anything is fine here! I used walnuts and raisins, but that’s only because I don’t have any vegan chocolate chips on hand)
1/3 cup flax seeds (I used both whole and ground flax seeds; ground flax is better for absorbing nutrients, but I also like the texture of whole seeds)
1/2 cup pure maple syrup
3 Tbs nut butter (peanut butter was my choice!)
2 tbsp canola oil
Mix together the dry ingredients. Mix together the wet ingredients
Stir the two mixes together
Drop on a baking sheet and bake for 12 minutes at 350.
Eat!!
