Tacos at Veracruz Food Truck

Hey there, Monday!

Last week was a full and fun week of playing a concert with Austin Symphony, teaching plenty of violin lessons, and doing some wedding planning (and a healthy dose of the Austin beer scene thrown in for good measure!!), and even though I had a wonderful week doing all of that, I’m happy for a 4-day work week and hopefully a little more sleep this week!

On weeks when I have early mornings of teaching and late nights of rehearsals, I’m always looking for quick dinners that don’t break the bank. Food trucks are my favorite options for quick, easy dinners on the run! On Friday night, before I headed to my Austin Symphony concert at the Long Center, Nate and I went to Veracruz All Natural food truck for a quick bite!

This is a great little food truck with 3 locations (two food trucks in Austin, and one brick-and-mortar in Round Rock, the suburb north of Austin) that was started by two sisters who moved from Veracruz, Mexico to Austin just after graduating high school. First of all: I love sisters. I’m a big fan. I have 5 sisters, and I love anyone who says that their sister is their best friend, because I 100% relate! Secondly, I love this food truck. They have simple, delicious, well-made tacos.

Food Network names their migas taco one of the top 5 tacos in America. You must try it. I get it nearly every time I eat at this food truck. I love it because they use homemade tortillas, stuff the taco with plenty of perfectly-cooked tortillas (not too crunchy or too soggy), and don’t skimp on the avocado on top!

Another favorite is the Pastor; again, there’s nothing flashy about it, but it’s a well-made pastor taco with a hefty amount of pork marinated in pineapple juice with plenty of delicious toppings like cilantro, queso fresco, and avocado.

I love going to the south Austin location parked outside Radio Coffee and Beer (named Best New Bar by Austin Chronicle in 2014!) so I can duck inside to grab an IPA to enjoy with my tacos!

A couple things about this location: parking is always insane in Radio Coffee and Beer’s main lot, so it’s best to go straight to the overflow lot. They also have an indoor space with a little stage in the corner. If you go in the evening, you might be able to catch a live performance, which is such a fun way to spend an evening! Cheers!

Happy MLK day! Hope you’re enjoying a little R&R today! I’m doing more wedding planning details today (seriously…the list never ends! haha), and trying to do my grocery shopping for the week so I can eat healthy this week. Last week was so crazy that I ended up eating more frozen meals (Amy’s and Trader Joe’s) than I would typically want to eat…this week I’m hoping to get in a few more veggies and homemade green juice!

I have yet to try Veracruz, but I’ll make sure to try it once I’m done with Whole30! I love Radio Coffee & Beer – such a fun outdoor patio and great coffee and beer selection. Good luck with your wedding planning!
